Spicy Tuna Pot Stickers

Makes 20 pot stickers

Ingredients:

  • 2 tablespoons mayonnaise
  • 1½ teaspoons sriracha sauce
  • ¼ teaspoons soy sauce
  • 2 scallions, minced
  • 3 tablespoons cucumber, finely diced
  • 4 ounces Ahi tuna cubes, chopped into smaller dice
  • 20 pot sticker, wonton or dumplimg wrappers
  • 2 tablespoons canola or peanut oil
  • ½ to 1 teaspoon wasabi paste (depending on how spicy you want it)
  • 2 tablespoons soy sauce

Directions:

  1. Combine the mayonnaise, sriracha, soy sauce, scallions and cucumber. Add the Ahi tuna cubes and stir to coat completely.
  2. Place 1 to 2 teaspoons of the mixture into the center of each wonton wrapper. Seal the wonton wrapper by rubbing a little water around the edge with your finger and then folding the wonton to match the edges and pressing firmly. You can pinch the edge a little for form the characteristic ripples.
  3. Make the dipping sauce by combining the wasabi paste and soy sauce. Set aside.
  4. Pre-heat a skillet over medium high heat. Add the oil and sear the pot stickers until lightly brown on each side – about one minute per side.
  5. Serve with wasabi soy dipping sauce.

*Alternately, you can serve the tuna mixture in a tortilla chip instead of making the pot stickers.
