Potatoes and Green Beans with Warm Bacon Dressing

This is a great side dish that will disappear quickly. The air fryer crisps up your bacon and drains the fat away with no mess and no fuss. Feel free to add other veg to the mix too if you like – red peppers, corn kernels or asparagus all work nicely here.
Ingredients
- 4 slices thick cut bacon, diced
- 2 shallots, minced
- 1 tablespoon brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- ¼ cup olive oil
- salt and freshly ground black pepper
- 2 to 3 large russet potatoes, cut in large chunks (about 1¼ pounds)
- 12 ounces green beans, cut in half
Instructions
- Pre-heat the air fryer to 400ºF.
- Place the bacon in the air fryer basket and air-fry at 400ºF for 10 minutes, shaking the basket a few times during the cooking process. Set the cooked bacon aside.
- Pour the bacon grease from the bottom drawer of the air fryer into a small saucepan. Add the shallots and brown sugar and sauté for 2 to 3 minutes, until the shallots soften. Remove the pan from the heat and add the apple cider vinegar and Dijon mustard and whisk to dissolve the mustard. Whisk in the olive oil. Season to taste with salt and freshly ground black pepper and keep warm until you are ready to serve.
- Toss the potatoes with a little olive oil and season with salt and freshly ground black pepper. Air-fry at 400ºF for 20 minutes, tossing the potatoes halfway through the cooking time. Add the green beans and air-fry for an additional 10 minutes.
- Place potatoes and green beans in a large serving bowl. Add the cooked bacon and pour the warm dressing over the top, tossing to coat. Finish with a little cracked black pepper.
