  • Cook Time: 10 m
  • Total Time: 15 m
  • Servings:
    4

Ingredients

  • 8 slices sandwich bread
  • 6 ounces grated Cheddar cheese
  • 2 tablespoons butter softened

Instructions

  1. Spread the butter on one side of all 8 slices of bread. Assemble the sandwiches by placing four of the slices butter side down on a work surface. Divide the cheese between these four slices, and top with the remaining four slices of bread, butter side up.
  2. Pre-heat a skillet or griddle (ideally square in shape) over medium heat. Add the assembled sandwiches and fry on both sides until nicely browned – about 3 to 4 minutes.

This is how my mom made grilled cheese for us growing up. After seeing your post, I had a grilled cheese and tomato soup for lunch today. It brought back a lot of good memories.

I love grilled QUATRO FORMAGGIO (Italian, shredded) cheese blend, thinly sliced onion or shallots, thin slices of dry salami or prosciutto, on sourdough sandwich bread, grilled Meredith’s way. Delicious served with Amy’s Organic tomato soup for dipping.

  3. Love grilled cheese…..I make mine by coconut oil on outside of bread…cut extra old white cheese, sprinkle dry mustard
(Keen’s), sliced garlic….fry on both sides….the mustard brings out the flavour of the cheese…I dip into Ketchup…the only time I use Ketchup….yum yum…healthy

Made this exactly as stated. Love this method of making the grilled cheese sandwich… delicious! Thank you for the recipe!

  5. Sourdough round sliced bread, shredded mozzarella, shredded cheddar, oregano, warm ham slices and butter, plenty of butter. Yum!

This is how my Mom made our grilled cheese sandwiches, except she didn’t grate the cheese–she’d cut a slice off a brick of sharp cheddar (always sharp cheddar!) & the bread was always whole wheat. It also had to be made in her cast iron skillet. When tomatoes were fresh, she’d add a thin slice of red onion & a slice of tomato. I’m 64 now & while I have no problem eating all different kinds of foods, when I think of grilled cheese sandwiches, it has to be Mom’s version, 😋 otherwise, while it may be delicious, it just isn’t a “real” grilled cheese sandwich. ❤️
